In the fall of 2019, we set aside a run of bourbon with a stubborn goal: don't just make Bottled in Bond—make the best one on the market. The 1897 law demands clarity: one distilling season, one distiller, one distillery; aged in bonded storage; bottled at 100 proof. That fits how we work in Hye. We sweet mash our grains, distill on site, and lay spirit into new toasted and charred American white oak. Then we let Texas do what Texas does best: turn heat and time into character.

For six summers the whiskey moved in and out of the wood, tightening its frame and deepening its color. When it finally spoke up, we listened. We proofed to 100 and put our name on it.

This release marks a milestone for Texas distilling and for our crew. Donnis is proud of it—proud of the patience, the discipline, and the decision to wait until the whiskey was truly ready. We didn't rush a label; we waited for a standard. Every drop comes from one season, one distiller, one place: Hye, Texas. That's the promise. That's the point. And that's why this bottle wears "Bottled in Bond" proudly with its head held high.

Bottled in Bond isn't a finish or flourish. It's a path you choose and stick with. In Fall 2019, we cooked a sweet mash of Panhandle white corn, soft red winter wheat, and two-row malted barley, fermented it in open air, and sent new make to fresh toasted and charred American white oak—compact 30-gallon barrels built to give the whiskey more contact with wood. Then we stepped back and let the Hill Country do its work.

Six summers of wild heat and cool nights pushed spirit deep into the oak and back again, carving structure and layering flavor you can see in the glass. We never blended across seasons, never cut corners, and never settled for close enough. This is bourbon built on discipline, aged with patience, and bottled with pride.
